Since its inception in 2020, the brewery has built a reputation for high-quality lager production and cemented its place in both the local community and the national beer industry.
This year marks the second of a three-year partnership with the Sydney Swans, a collaboration that has seen White Bay’s branding and packaging undergo a recent refresh to match its expanding presence. The brewery has also garnered several prestigious accolades, including the 2022 Australian Champion Beer for its Munich Lager at the Independent Beer Awards and the Champion Lager title at the 2024 Sydney Royal Beer & Cider Awards. Additionally, White Bay was recognized for the Best Beer Launch for its Sydney Swans 150th Anniversary Lager at this year’s Beer & Brewer Awards.
Crafting a Distinct Identity with Lager
What sets White Bay apart from many other craft breweries is its unwavering focus on lagers, a departure from the ale-heavy offerings found in the broader craft beer market. The brewery’s commitment to crafting innovative lagers is a key aspect of its identity, as Senior Sales Manager Jackson Davey explains.
“Since we opened, we’ve released a new beer roughly every 10 days. We’re not just being experimental — we’re revisiting historic lager styles from Central Europe,” said Davey. Drawing influences from countries such as Czechia, Poland, Germany, and Slovenia, White Bay’s focus on lager provides a unique point of difference in a market typically dominated by American-style craft ales.
Head of Production Paddy Ryan emphasized the brewery’s dedication to the time-intensive lager process. “We love what they do in Germany and Czechia — allowing the beer to naturally carbonate and clarify over three months,” Ryan said. This traditional approach results in a clean, balanced beer that showcases the purity of the ingredients.
White Bay’s Extra Pale Lager, which has become the official beer of the Sydney Swans, was crafted to offer a lighter, more approachable entry point for lager newcomers. “We wanted to create a beer that’s different from what’s already out there in the market, while still being a high-quality lager that’s easy to drink,” said Davey. The beer is described as “sessionable, but not flavourless, and hoppy, but not obnoxious,” appealing to a broad range of beer drinkers.
A Strong Local Connection
White Bay Brewery has also embraced its local roots, a connection strengthened during its early days of operation amid Sydney’s COVID-19 lockdowns. Despite Rozelle-Balmain not being known as a craft beer hotspot, the area has seen a rise in unique businesses, including a rum distillery, a gin distillery, and a coffee roaster — all contributing to the growing local culture.
Davey points to the neighbourhood’s vibrant pub scene as another asset. “While we may not have the foot traffic of areas like Marrickville or Brookvale, we are proud to be part of this local precinct. More and more people are taking notice,” he said.
This strong local identity also aligns with White Bay’s brand positioning as an independent brewery, distinguishing it from the broader craft beer label. “We focus on independence and quality, and we want to make beers that anyone, regardless of whether they consider themselves a craft beer drinker, could enjoy,” said Davey. This philosophy has also resonated with the Sydney Swans, who sought a partner with local ties and a passion for community engagement.
“We offered the Swans the opportunity to collaborate with a truly local business,” Davey explained. “As the only brewery on the foreshores of Sydney Harbour, we were eager to put in the hard work and effort to support them.”
Taproom and Visitor Experience
For those wishing to experience White Bay’s beers firsthand, the brewery’s taproom, located on Mansfield Street in Rozelle, is open Thursday through Sunday. Visitors can enjoy the brewery’s full range of beers, including its award-winning lagers, from 3 p.m. to 10 p.m. on Thursdays, 12 p.m. to 10 p.m. on Fridays and Saturdays, and 12 p.m. to 8 p.m. on Sundays.
