Cazcabel Tequila has commenced production at its new £37 million distillery located in Atotonilco el Alto, nestled in the scenic Jalisco mountains. Originally announced in July 2021, the distillery is strategically positioned near natural water springs, enhancing the quality of the Tequila production process.
Situated in San Francisco de Asis, Los Altos, Jalisco, at nearly 2,000 meters above sea level, the new facility marks a significant upgrade from Cazcabel’s previous small-scale microdistillery along the same route. The transition to the new site is now complete, consolidating all production operations.
Set to open later this year, a visitor center at the distillery will feature amenities such as a restaurant and rooftop bar, offering guided tours of the Tequila-making process to visitors.
With a production capacity of up to 23 million bottles annually, the distillery positions Cazcabel to expand its global footprint from 50 to 70 markets by the end of 2025. The facility integrates traditional methods with innovative practices, including three mason brick ovens for slow-roasting hand-cut agave over 26 hours, and roller mills to maximize sugar extraction while minimizing waste.
A commitment to sustainability is evident with the distillery partially powered by solar panels, with plans for full solar and wind turbine operation in the future. Oversight of production falls under the expertise of Cazcabel’s master distiller, Yadira Hernàndez Lozana.
The project has generated over 350 local jobs and underscores Cazcabel’s dedication to environmental stewardship, using locally sourced materials and preserving surrounding flora and fauna. The distillery’s entrance features a spacious courtyard centered around an ancient tree, designed as a communal space for gatherings.
Cazcabel’s acclaimed range includes blanco, reposado, and añejo Tequilas, contributing to its status as one of the fastest-growing Tequila brands globally. Currently available in markets such as the US, UK, Australia, New Zealand, Sweden, and various Central European countries, Cazcabel continues to solidify its reputation for premium Tequila craftsmanship and sustainable business practices.
