Jarina and Julian, the couple behind Gallon, purchased the space—formerly an office—in what was then an up-and-coming precinct. Over the years, they transformed the two-story building into a stunning dining destination, preserving elements like exposed sandstone walls while incorporating modern touches. “We’ve gathered pieces from auctions that reflect Pyrmont’s history—what the area used to be,” says Jarina. “Every time you come, you feel like you’re in a different bar, surrounded by stories of the past.”

While the decor is a draw in itself, Gallon’s menu is equally compelling. Inspired by Jarina’s Slovakian roots, the cuisine at Gallon focuses on fresh, simple ingredients. Everything is locally sourced, and no items are frozen, ensuring the dishes are always prepared with the highest quality ingredients. “We’re particularly known for our chicken wings,” Jarina boasts. “We’ve got some of the best wings in New South Wales.”

Other fan favorites include tender meatballs, slow-roasted pork, lamb shoulder, beef, and share plates like hot crumbed cheese, all of which are named after members of Jarina’s family. Pizzas are another highlight, crafted with the same attention to detail and quality.

For wine enthusiasts, Gallon offers an extensive selection of wines, alongside a cocktail menu that keeps patrons coming back. “We’re one of the best wine bars, but we’re more than just that—we also serve a wide range of cocktails,” says Jarina. The venue is also a popular spot for Sydney Wine Centre’s wine-tasting events and has recently introduced a refreshing selection of spritz cocktails for the summer season.

Gallon’s connection to Pyrmont goes beyond its history and design. The restaurant has built strong relationships with local businesses, including the nearby Sydney Lyric Theatre. “We do pre-show drinks, and we offer a quick menu for theatergoers,” says Jarina, adding to the restaurant’s status as an essential part of the Pyrmont community.

In addition to being a top spot for casual dining, Gallon offers various spaces for functions, catering to groups ranging from 10 to 150 people. The Sunroom, Stables Bar, and Courtyard are among the available areas, making Gallon a versatile venue for events of all kinds.
