West Side Brewing Acquires Wyoming Bar and Grill, Plans Rebranding as Gilligan’s Brewery

West Side Brewing has acquired the Wyoming-based bar and grill formerly known as Gilligan’s On The Green, with plans to rebrand the establishment as Gilligan’s Brewery. The rebranding will officially begin on February 1, 2025, as the brewery looks to infuse its heritage-rich brews inspired by the British Isles into the venue.

This move follows West Side Brewing’s decision to relocate production of Gilligan’s beer portfolio to a site adjacent to the bar in December 2024. The acquisition aligns with the brewery’s mission to honor the legacy of its Irish-American ancestors while enhancing the local beer scene.

According to CityBeat, the deal was primarily driven by EP Investment Group, the bar’s previous owners, who aimed to create a more authentic taproom experience and establish a reputation for quality beer and hospitality. EP Investment Group President Frank Eversole emphasized the logistical benefits of allowing West Side Brewing to take full operational control, citing the brewery’s on-site brewing capabilities as a key factor.

West Side Brewing CEO Joe Mumper also commended the extensive renovations and operational improvements made to the venue since its opening in November 2023. He expressed excitement about working with the current management team, including General Manager Emmy Friedrichs and Head Chef David Mapstead, to ensure continuity and maintain the venue’s strong reputation among locals.

Despite the change in ownership, reports from Local12 and FOX19 suggest that visitors can expect “exciting changes” under the new management. Mumper hinted at plans to collaborate with Friedrichs to transform Gilligan’s into one of the best brewery taproom experiences in the region.

The transition has been described as a smooth and collaborative process, with a focus on maintaining staff and avoiding layoffs. Gilligan’s current staff, including Head Brewer Ryan Baird, will continue in their roles, ensuring a seamless shift in operations. Baird also noted that the brewery’s beer offerings would maintain a strong connection to British and Irish brewing traditions, with a variety of options ranging from Irish-style ales to bitters, lagers, and stouts.

“The goal is to offer something for everyone while staying true to traditional recipes that pay tribute to our heritage,” Baird said.

The acquisition marks a new chapter for the iconic venue, with West Side Brewing poised to elevate the space while honoring its legacy.
