Kiitos Brewing, located in Salt Lake City’s Granary District, has sold out of its pioneering beer made entirely from fonio, a rare ancient grain native to West Africa. However, beer enthusiasts need not worry—the brewery is already brewing a new batch.
In January, Kiitos made headlines by releasing the first-ever beer in the U.S. made 100% from fonio. While Brooklyn Brewery in New York City had been incorporating fonio into some of its brews since 2019, Kiitos claims to be the first to brew a beer with the grain as its sole ingredient. The resulting beer is clear when poured into a glass and is naturally gluten-free.
Patrick Borque, Kiitos’ production manager who led the brewing project, confirmed to The Salt Lake Tribune on Wednesday that the brewery is already preparing another batch of the fonio beer, with fermentation expected to take about two weeks. The new batch will be available on draft and in cans.
Since the release of the fonio beer, Borque said the brewery has seen an influx of people calling and visiting to try the unique beverage.
Stephanie Biesecker, executive director of the Utah Brewers Guild, described the beer’s flavor as fruity but not overly sweet, with a “really light, very, very refreshing” profile. Borque added that the beer features distinct notes of passionfruit, lychee, and white peach, all imparted by the fonio itself, as no hops were used in the brewing process.
