Septimus House of Cheese and Wine to Open in Adelaide with a Focus on Fine Pairings, Art, and Music

Septimus House of Cheese and Wine, a unique venue set to open later this month on Grenfell Street in Adelaide, combines the passions of owner Ian Coker for wine, music, and art. The venue, described by Coker as a “labour of love,” is designed to offer visitors an exceptional experience centered around wine and cheese pairings, while also embracing the cultural richness of Japanese listening bars from the 1950s.

On a hot 34-degree day, stepping into the venue provides immediate relief thanks to the working air-conditioner, despite it still being a work-in-progress. Coker greets guests with a glass of Rieslingfrieak No. 7, a sweet dessert wine that sets the tone for what promises to be a refreshing and educational experience.

Coker’s passion for wine began at the age of 18, when he received a call about investing in wine during a boom in the early 2000s. Although he didn’t purchase anything, the call sparked a lifelong interest that led him to begin collecting wines, many of which will be available at Septimus. His collection is primarily made up of South Australian wines, with Wendouree from the Clare Valley being one of the standout offerings. Coker highlights the unique process involved in purchasing Wendouree wine, which requires writing a handwritten letter to the Brady family, who operate the winery.

Septimus’ menu will feature a core offering of “seven cheese and wine pairings,” with three white wines, three red wines, and a dessert wine, each paired with artisanal cheeses from Say Cheese. This unique pairing concept aims to expand patrons’ palates, offering alternatives to more traditional pairings like Barossa Shiraz. Coker hopes guests will be introduced to new experiences, such as pairing Sancerre from the Loire Valley with goat’s cheese.

In addition to the signature pairings, the venue will offer a variety of wines by the glass or bottle, complemented by light snacks such as olives, nuts, and bread. A strong emphasis on South Australian wines will be featured, along with a selection of French wines and a rotating collection of aged wines stored in an offsite underground cellar.

While wine and cheese pairings are the focus, Coker places significant importance on the role of music in the experience. Inspired by Japanese listening bars from the 1950s, which allowed people to gather and enjoy music in a community setting, Septimus will feature white JBL speakers, a turntable, and a CD player. The setup is meant to create a shared experience, with Coker’s own music collection and that of local record purveyor Clarity Records contributing to the atmosphere.

The venue’s interior design reflects Coker’s attention to detail, with lilac walls, Tasmanian oak timber, and green marble countertops for the bar. Local artists will have their work displayed on the walls, adding to the ever-evolving cultural experience at Septimus. Outdoor seating and flower boxes with lavender will contribute to a relaxed, neighborhood vibe, with French design influences present throughout.

Septimus House of Cheese and Wine will officially open its doors at 220 Grenfell Street, Adelaide, at the end of February, promising an innovative and sensory-rich destination for wine lovers and art enthusiasts alike.
