Asia’s cocktail culture is rapidly evolving, offering a diverse and innovative bar scene that contrasts sharply with traditional markets like London. The region has become a hotspot for new trends, embracing experimentation and a youthful energy that attracts both locals and international visitors.
“Asia’s bar scene is incredibly dynamic and diverse. Each city brings something unique to the table, with a strong focus on cocktails and a welcoming attitude towards experimentation,” says an industry insider. This openness to innovation, he explains, stands in contrast to the more traditional London cocktail culture.
Cocktail Trends: Asia vs. London
When comparing the cocktail scenes in Asia’s top cities and London, the key difference lies in the type of drinks people are ordering. In cities like Seoul and Singapore, cocktail bars tend to attract a younger crowd that is more inclined to try signature cocktails and new trends, rather than sticking with the classics. For example, last year’s popularity of the Ramos Gin Fizz started in Asia, where the market is more adaptable to new trends.
In London, however, the cocktail scene remains rooted in tradition. At Scarfes Bar, for example, patrons continue to favor well-known cocktails like Old Fashioneds, Martinis, and Negronis, showcasing the city’s strong culture of classic drinks.
The Importance of Guest Shifts in Bartending
Guest shifts, where bartenders work at different establishments for short periods, have become a valuable opportunity in the industry. “I view guest shifts as a student exchange program,” the insider explains. “They offer bartenders the chance to learn from their peers, exchange ideas, and broaden their understanding of different cocktail cultures. This helps bring the bartender community closer together.”
Unique Cocktail Cultures in Hong Kong, Singapore, and Seoul
During a recent tour of Asia, the bartender experienced the unique characteristics of Hong Kong, Singapore, and Seoul.
Each city offers its own take on cocktails. Seoul’s cocktail scene is notably young, energetic, and quick to adopt new trends, with a strong emphasis on celebrating local ingredients. In contrast, Hong Kong stands out for its diverse range of establishments, from laid-back dive bars to upscale hotel venues, reflecting its international population. Singapore, meanwhile, is recognized not only for its innovative cocktail bars but also for its exceptional food pairings, creating a unique fusion of beverages and dining.
A Revelation: Efficient Ice Management in Asia
One key takeaway from the Asia trip was the emphasis on ice management. “The use of ice is a universal challenge in bartending, but the solutions I saw in Asia were particularly impressive,” says the bartender. Efficient ice handling plays a crucial role in the final taste and presentation of cocktails, and Asia’s bar scene has developed some innovative techniques that could set trends globally.
From Part-Time Job to Passion: The Journey Into Bartending
Like many in the industry, bartending started as a part-time job while studying. However, it quickly grew into a passionate career. “Surrounded by great colleagues, I learned quickly, and soon I was the one sharing my love for cocktails with everyone who walked through the door. The fast-paced nature of the industry became my daily routine, and once I dove into the art of cocktail creation, I knew I had found my calling.”
A New Menu Inspired by the Art of Gerald Scarfe
The latest menu at the bartender’s establishment, titled Long Drawn Out Sip, celebrates the surreal world of artist Gerald Scarfe. “Our new menu highlights 24 signature cocktails inspired by his artwork, movies, TV shows, and theater work,” explains the bartender. After months of research, the team developed a selection of drinks that explore the themes of fears, desires, revelations, and transformations, reflecting the essence of Scarfe’s contributions to the art world.
Favorite Cocktail to Make and Drink
When asked about his favorite cocktail to make, the bartender shares that it’s the Toothless Grin from the new menu. “The complexity of this drink is what makes it so interesting,” he explains. “Small details like the temperature of the glass, the ice, and the way you stir can all influence the final flavor.”
As for his personal preference when it comes to drinks, he enjoys a Vesper Martini with a signature twist—served with ice speckles on top, a nod to the style of cocktails on their Heroes & Villains menu.
Asia’s bar scene continues to evolve, blending tradition with cutting-edge innovation, and providing a dynamic environment for bartenders and cocktail enthusiasts alike.
