Copperworks Distilling Announces Major Expansion Projects

Seattle-based Copperworks Distilling is set to expand its operations with the addition of a brewhouse, cocktail bar, bottle shop, and farm-to-table kitchen. The craft distiller has announced three key projects, including the acquisition of Pike Brewing’s brewhouse.

“Copperworks had always aimed to establish our own brewing facility. However, the high costs of building a new brewery and the innovative contract partnerships we have in place with local breweries have continuously postponed this plan for the future,” explained Jason Parker, co-founder and president of Copperworks, who began his career as a brewer at Pike.

Pike Brewing revealed in October 2023 that it would move to a new facility in Seattle’s SoDo neighborhood to expand its beer production. Copperworks will take over Pike’s former 12,000-square-foot brewing facility near Seattle’s iconic Pike Place Market, while Pike Pub and Pike Fish Bar will remain in their current locations. Previously, Copperworks brewed at local facilities including Pike Brewing and more recently Talking Cedar.

“Our team is already trained and available to do the brewing without any additional hires necessary,” stated Jeff Kanof, co-owner and vice president of Copperworks. “Increased production will allow us to make more vodka, more gin, and put up more whiskey for aging. This presents an opportunity for us to become a leader in the industry as an independent craft American single malt whiskey producer.”

The new facility will also serve as a barrel storage warehouse. Additionally, Copperworks is planning a new cocktail bar and bottle shop adjacent to the Pike Brewing location. “Though we’re only three blocks away from the downtown Seattle distillery, we’re looking forward to serving a completely different demographic of tourists in this new cocktail bar location,” Kanof added.

Moreover, Copperworks will partner with De La Soil to open a farm-to-table restaurant at Copperworks Kenmore, a 5,000-square-foot space that opened in 2023 featuring a cocktail bar and tasting room. The restaurant, run by chefs Cody and Andrea Westerfield, will source 75% of its produce from Tuk Muk Farm in Woodinville, Washington.

“Now that we have a chef and team in place, including a farmer right up the road to deliver farm-to-table food, we’d love to open as soon as possible so we can serve the Kenmore community drinks from Copperworks and food from De La Soil,” Parker said.

To support these expansions, Copperworks has launched an equity crowdfunding campaign on StartEngine. While all projects are actively in progress, no timeline for completion has been announced.
